Smashed Chicken Tacos

Mixing tacos with Caesar salad is a match made in heaven! These smashed chicken tacos are quick and easy to make, taste delicious, and will quickly become a family fav!

Ingredients

Chicken Mince Seasoning:

4 x tsp oregano
3 x tsp parsley
1 x tsp Smoked Paprika
1 ½ x tsp garlic powder
1 x tsp Onion Powder
1 x tsp Salt
1 x tsp black pepper

500g Waitoa Chicken Mince

 6-7 Small Taco Tortillas
1 x Small Romaine Lettuce Finely Sliced

7-8 Strips of Streaky Bacon
75g x Grated Parmesan (Approx. ¾ Cup)

Caesar Dressing (Either Store-Bought or Homemade) To Drizzle

Method

  • In a large bowl, combine the Waitoa chicken mince with all seasoning ingredients and mix until well combined.
  • Divide the chicken mixture into 6-7 portions on a separate plate. As the mixture is wet, it will not roll well by hand, so we recommend using 2 spoons to scoop the mixture.
  • In a large frying pan, cook all the bacon until it’s well-cooked and crispy. Remove from heat and set aside on a separate plate.
  • Once cool, slice into crispy chunks.
  • In the same pan, place one of the chicken portions into the middle of the frying pan and place a tortilla on top. Using a spatula, press down on the tortilla until it is flat on the pan. Fry until chicken is cooked through and starting to crisp on the outside (around 2-3 minutes).
  • Flip the tortilla and cook for an additional 1-2 minutes until it is lightly toasted.
  • To finish, remove each tortilla from the pan and top with shredded romaine bacon, parmesan, and a drizzle of Caesar dressing.
