Cheesy Chicken Sausage, Potato and Vegetable Bake

Throw sausages, potatoes and vegetables together in an ovenproof dish, topped with cheese and cooked together in a hot oven for a super simple family dinner.

  • 6 Waitoa Chicken Sausages
  • 4 potatoes, peeled, cut in chunks and parboiled
  • 1 red onion, cut in thin wedges
  • 1 cabbage, cut in wedges
  • 1 cup mini tomatoes
  • 1 tbsp dijon mustard
  • 1 cup chicken stock
  • 5 slices of cheese
  • A handful of fresh thyme


  1. Heat oven to 200C.
  2. Mix mustard with chicken stock in a bowl.
  3. In an ovenproof dish, arrange onion, cabbage, potatoes,sausages and tomatoes attractively.
  4. Season with salt and black pepper, then gently pour the stock mixture.
  5. Place sliced cheese on top and scatter thyme all over.
  6. Bake in the oven for 45 minutes.

Tip: If you want to add raw potatoes to the dish instead of parboiled, slice the potatoes smaller.
