In a mortar and pestle pound garlic, coriander root, krachai and chilli until fine. Heat oil in a skillet, add the spice mixture and sauté until an aroma develops.
Add chicken and sauté until thoroughly cooked. Add the sliced kaffir lime leaf, chicken stock, oyster sauce, light soya sauce, sugar, Chinese cooking wine, green peppercorns, onion, spring onion, asparagus, snow peas and oyster mushrooms.
Cook until all ingredients are mixed through. Transfer to a platter and serve.
