Barbecue Chicken Kebabs with Summery Salad

Ingredients

Kebabs:

  • 8 Waitoa Free Range Applewood Smoked Chicken Kebabs
  • Cooking oil

Summery salad:

  • ½ cup pecans
  • ¼ cup sultanas
  • 1 avocado, sliced
  • ¼ cup fresh basil leaves
  • 1 apple, thinly sliced
  • ½ cup feta, crumbled
  • 1 bag baby cos lettuce

Salad dressing:

  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp wholegrain mustard
  • ¼ tsp cinnamon powder
  • 1 garlic clove, crushed
  • Salt and pepper, to taste

Method

  1. Preheat barbecue on medium heat. Drizzle with oil and barbecue the kebabs, turning as needed, until cooked, about 15 mins then set aside.
  2. Whisk all salad dressing ingredients together, then season to taste with salt and pepper. Set aside.
  3. Toss salad ingredients with salad dressing. Serve salad with kebabs.
